Savigny-Les-Beaune

Grape variety: Pinot Noir

Vine age: 70 years old on average (gathering of several plots from different climates existing in Savigny les Beaune)

Production per year: 9200 bottles

Exposure, soil: vine located at the entry of the village, pebbly and clayey soil.

Winemaking: handmade harvest in small crates. The grapes are sorted out in the Domaine, then 100% de-stemmed, no crushing and finally put in vats for the alcoholic fermentation. The fermentation in vats lasts about 25 days with 1 cap punching and 1 pumping-over per day. Then, the wine is put in oak barrels for 14 to 16 months in order to carry out the malolactic fermentation.

Wine ageing: 14 to 16 months in oak barrels (2 to 5 wine barrels)

Wine characteristics: cherry red color, black and red fruit aroma. Round, slightly tannic and well- balanced mouthfeel.

Aging capacity: to be kept from 5 to 10 years.
